Level One Wine Bar is a wine bar and restaurant with a difference. We’ve put together a simple formula, and we think it works pretty well. In winter, we turn on the fire in the middle of the dining room, while in summer we open bay windows looking out over Dean Street.
We encourage our guests to explore our wine corner and choose from over 300 wines on display. Many labels in our cellar are unique to Level One Wine Bar.
So why not ask our resident drinks expert to help pair one of our fine wines with a delicious dish from our seasonal menu. The collection of wines available by the glass changes every three weeks.
Level One Wine Bar imports a wide selection of wines from France, Italy and South America. Many of these are also available by the glass, including our exclusively imported Champagne Bouchet from France and Conca D'Oro Prosecco from Italy.

Our team in the kitchen is continually creating dishes to complement the vast array of wines we stock. Head Chef, Matt King, has worked at some of the best restaurants in Australia as well as having recently spent a year in Japan.
Chef Mat says his culinary secret is to source fresh, seasonal, local produce and prepare dishes using simple traditional techniques. When presented to our guests, they not only look great; but are taste sensations.
Wine is a significant component of Level One Wine Bar and what better way to show off the 300 wines we stock than to have them all displayed on our wall-of-wine. Guests are invited to choose a wine from the wall themselves or ask Mark about his suggestions for the occasion.
We have wines from all over Australia as well as many principal wine-producing regions across the world. From the Coal River Valley in Southern Tasmania and Albany in the South West corner of Western Australia to the Uco Valley (Mendoza) in Argentina and Aix en Provence in the South of France.
Wine has always been a passion of ours, and every winery has a story. Through Level One Wine Bar, we now have a way to bring our love of wine and favourite vineyard stories to our guests.
We have at least 15 wines available by the glass at any one time, and through the use of a Coravin Wine Preservation System, we often able to serve our icon wines by the glass as well. The list of wines by the glass changes every three weeks so that every visit to Level One will see a new experience.

With over 30 years of experience in the wine industry, Mark has owned and managed successful wine companies in both the retail and wholesale sector. Deb and Mark currently operate a successful wine wholesale business as well as a wine import company which complement the Level One Wine Bar.
With over 30 years of experience in the hospitality industry, Deb is the perfect hostess. She has owned and managed many restaurants and bars in Melbourne and surrounds. Deb is also a company director of several family businesses co-owned with her husband, Mark. Level One Wine Bar is her new baby, and she looks forward to welcoming you all.
